Journey Through the Cape: The Urchin’s Eleven-Course Ode to Luxury, Heritage and South African Soul

At Hyatt Regency Cape Town, Chef Marcus Gericke transforms childhood memories, regional treasures and cultural heritage into one of the city’s most compelling fine-dining experiences.

In a city celebrated for its world-class culinary landscape, it takes something truly extraordinary to rise above the noise. Yet tucked elegantly within the prestigious Hyatt Regency Cape Town, The Urchin Restaurant has quietly become one of the Mother City’s most coveted dining destinations, offering not merely a meal, but a deeply immersive gastronomic experience rooted in story, sentiment and sophisticated craftsmanship.

At the centre of this culinary theatre stands Chef Marcus Gericke, a visionary fine-dining enthusiast whose approach to food transcends technique and enters the realm of artistry. His acclaimed 11-course “Journey” tasting menu is an exploration of the Western Cape’s cultural heartbeat, a luxurious showcase of place, memory and identity presented through some of South Africa’s most beloved ingredients.

Before conceptualising the menu, Gericke embarked on an intensive three-day expedition through the province, traversing the rugged Karoo, the lush Garden Route, the celebrated Stellenbosch Wine Route, the windswept West Coast and the scenic stretches of Route 62 through Robertson. The journey was one of discovery, gathering stories, ingredients and inspiration from the landscapes and communities that have shaped the Western Cape’s culinary narrative for generations.

The result is an exquisitely curated tasting experience that celebrates South African heritage with international finesse.

For me, the evening felt remarkably personal.

Each course carried an unmistakable sense of nostalgia, evoking memories of childhood, family gatherings and the flavours that have long defined South African kitchens. Yet under Chef Marcus’s masterful execution, these familiar references were elevated into dishes deserving of the world’s finest dining rooms.

The experience commenced with an elegant cocktail programme curated by Devan, whose creations drew inspiration from the vineyards of Stellenbosch. Having arrived from the sparkling coastline of Camps Bay, where the afternoon sun still lingered over the Atlantic, the refreshing Chardonnay-inspired cocktail felt like the perfect welcome into the Cape’s most celebrated wine region.

The opening Voorslukke set the tone for the evening. Refined, playful and beautifully balanced, it introduced diners to the flavours of the province through an elevated interpretation of traditional bar snacks.

Soon after came the Voorhappie, an inspired tribute to Kalk Bay and legendary culinary personality Aunty Ferial. Freshly sourced snoek was paired with sultana and curry leaf, creating a bite that effortlessly connected Cape Malay influence, oceanic freshness and culinary heritage. It was both delicate and deeply evocative.

The third course paid homage to Stellenbosch’s agricultural abundance. Fresh bread, house-made preserves, rich farm butter and aromatic fynbos oil arrived with understated elegance. In many ways, it served as a reminder that true luxury lies not in excess but in exceptional ingredients handled with care and respect.

One of the most emotionally resonant moments of the evening arrived in the form of Kook en Geniet, meaning “Cook and Enjoy.” Built around venison, meebos and sweet potato, the dish is deeply personal to Chef Marcus. Rich, comforting and beautifully composed, it reflected the emotional foundation upon which the entire Journey menu is built.

And yet, we were only just beginning.

As course after course arrived, it became increasingly evident that Chef Marcus is not interested in recreating tradition. Rather, he seeks to reinterpret it, preserving its soul while presenting it through a luxurious contemporary lens.

The warm-cold starter exemplified this philosophy perfectly.

A sophisticated reimagining of the Western Cape’s beloved pickled fish, accompanied by radish and Cape Malay sauce, the dish balanced acidity, freshness and precision. Familiar flavours were transformed into something entirely new while maintaining their authentic South African character.

It was impossible not to admire the chef’s restraint and confidence.

Every element served a purpose.

Every flavour told a story.

The journey continued with what Marcus affectionately describes as the Pumpkin Starter, inspired by memories of grandmothers whose kitchens remain the first culinary classrooms for so many South Africans. Rich with comfort and nostalgia, the dish demonstrated how memory itself can become a luxury ingredient.

Then came one of the evening’s most spectacular presentations.

Sourced from the pristine waters surrounding Paternoster, approximately 135 kilometres from Cape Town, the crayfish course embodied coastal elegance. Resting upon a velvety cream infused with delicate fynbos notes, the dish captured the essence of the West Coast with remarkable sophistication. Every bite felt luxurious, refined and profoundly connected to place.

Yet perhaps the most surprising highlight emerged from ingredients many South Africans would never associate with fine dining. Samp, Oxtail and Atchar. The holy trinity of comfort food.

Under Chef Marcus’s vision, these humble ingredients evolved into one of the menu’s most memorable masterpieces. Perfectly braised oxtail paired with beautifully prepared samp was elevated through contemporary techniques while retaining the comforting familiarity that makes the dish so beloved.

The addition of atchar introduced a vibrant layer of flavour more commonly associated with Gauteng’s dining culture, creating a remarkable convergence of South African identities on a single plate.

This was far more than a dish.It was South Africa itself. Complex, Diverse and Beautifully united.

As the evening moved towards its final acts, diners were treated to a pre-dessert inspired by one of the nation’s most iconic sweet treats: milk tart.

Yet what arrived was unlike any milk tart imaginable.

Gone were the expected cinnamon dusting and traditional presentation. In their place stood an elegant interpretation that distilled the essence of milk tart into a refined and modern expression. One spoonful instantly transported me back to childhood celebrations, Sunday lunches and family gatherings.

It was nostalgia dressed in couture.

The dessert sequence continued with bright peppermint elements, offering freshness, vibrancy and a distinctly South African finish. Delicate yet impactful, the final courses brought the Journey to a graceful conclusion while reinforcing the menu’s overarching narrative of place, memory and cultural pride.

Throughout the evening, one truth became increasingly clear.

Chef Marcus Gericke is not simply a chef. He is a curator of memories.

Every plate presents a carefully constructed chapter in a larger story. Every ingredient serves as a tribute to the people, traditions and landscapes that define the Western Cape. At a time when many luxury dining experiences seek inspiration abroad, Marcus boldly turns inward, proving that South African cuisine possesses the depth, sophistication and richness to command a place on the world’s most prestigious culinary stages.

At The Urchin, luxury is not defined by extravagance alone. It is found in authenticity.

It is found in heritage. It is found in the ability of a single bite to transport a guest back to a forgotten moment in time, and that is precisely what makes this experience unforgettable.
